Quinoa Cutlet
Ingredients:- 1 cup Chef Urbano Quinoa Seeds, 3 tbsp gram flour (besan), 1/2 capsicum (green pepper), 1/4 cup shredded cabbage, 1 tsp dry mango powder, 1 tsp red chilli powder, 2 tbsp coriander leaves, 1 large onion, 1/2 carrot, 1 tsp coriander powder, salt as required and 1 tbsp vegetable oil.
Method To Make Quinoa Cutlets
Soak Chef Urbano White Quinoa Seed for 30 minutes. Now wash it properly, add it to a blender, and blend to form a thick paste. Add 1-2 tbsp water, if needed.Take out the quinoa paste in a bowl. Add finely chopped capsicum, onion, carrot, cabbage and coriander leaves. Add besan, salt, coriander powder, dry mango powder and red chilli powder. Give a nice mix to form a thick mixture.Now drizzle a tbsp of oil on a non-stick pan and let it heat. Make small tikkis from the mixture and place them in the pan. Cook from both sides until golden brown in colour.Once all the cutlets are cooked, serve them with a dip of your choice.
Quinoa Khichdi
Ingredients:- 1/2 cup washed Chef Urbano White Quinoa Seeds, 1/2 cup soaked Split Yellow Lentils or Red Lentils, 1 tbsp Ghee or Oil, 1 tsp Cumin seeds, 1/4 tsp Asafoetida, 1/2 cup chopped Yellow onion, 1 tsp grated Ginger, 3 1/2 cups water, Cilantro for garnish, 1/2 cup diced Green Beans, 1/2 cup diced Carrot, 1/2 cup Green peas, 1/2 tsp Turmeric Powder, 1/2 tsp Red Chili powder, and 1 tsp Salt.
Method To Make Quinoa Khichdi
Add Chef Urbano Quinoa Seeds and moong dal to a colander and rinse with water until the water runs clear.Start the instant pot on Sauté mode and heat the ghee in it. Add cumin seeds and let them cook for 30 seconds. Then add asafoetida, onions and ginger. Let them cook for 2-3 minutes.Add all the vegetables and spices. Stir them well and finally add lentils and quinoa seeds. Close the instant pot lid.Garnish with cilantro. Your khichdi is ready to serve.
Quinoa Biryani
Ingredients:- 4 cups cooked Chef Urbano White Quinoa Seed, 1 tbsp oil, 2 whole dry chilli peppers, 2 whole bay leaves, ½ cinnamon stick, broken into pieces, 4 whole cloves, ½ tsp whole cumin seeds, 1 thinly sliced zucchini, 1 sliced medium onion, 1 small thinly sliced eggplant, 1 cup mixed vegetable, 2 sliced green chiles, 4 finely chopped cloves garlic, 2 tsp minced ginger, 1 tsp red chilli powder, ½ tsp turmeric, 1 tsp salt, 2 tsp biryani masala pack, ½ cup water.
Method To Make Quinoa Biryani
Heat oil in a pan. To this, add whole spices like bay leaves, cinnamon sticks, dry chilli peppers, cloves and whole cumin seeds.Once the spices start to sizzle, add the chopped veggies, garlic and ginger.Add water and mix well. Cook for about 5 minutes, until veggies soften and the flavours incorporate into the dish.In a separate pan, alternate with a bed of quinoa layered with the cooked veggies.Garnish with chopped cilantro and serve hot.
